The Italian Culinary Institute was established to constantly update cooking techniques and menu development in Italy’s increasingly competitive environment. Today, the Institute is considered by many to be Italy’s top culinary academy and among the most important in Europe.

Master Chef John Nocita leads a faculty of more than ten of Europe’s most renowned Culinary and Pastry Masters.

Master Courses are designed for professionals and concentrate on advanced techniques that are continually being developed through the Institute’s research and participation in international culinary competitions.

The most advanced full immersion culinary course available in Italy where particular attention is given to nutrition, gustatory perception, recipe development and spectacular plating presentations. Antipasti, pasta, sauces, seafood, meats, baking, desserts and vegetarian Mediterranean cuisine are all covered. Cultural exploration and travel in southern Italy & Sicily and fine dining highlight the experience.

During this hands-on course, we first prepare traditional baked products and then a line of innovative delicacies demonstrating how anything can be personalised for our clients or guests. This course combines centuries old traditional pastries, modern desserts and artisan Italian gelato during one week of hands-on full immersion. Every participant who attends will gain the skills to make a wide range of sweets and become an expert gelato maker. Everyday we taste all of the products we make for an ongoing gustatory analysis which we consider indispensable for the learning process. The program includes the food science to develop your own creations and to eliminate 'recipes' forever!
